Decorated Sugar Cookies Whatever the holiday, it's always made a little sweeter with a sugar cookie! With this more advanced, tasty recipe, your autistic kiddo can practice following directions, measuring, creativity, and fine motor skills. Cookie Ingredients:
2 cups sugar 2 cups salted butter
2 eggs
2 tbsp vanilla extract
4 tsp baking powder
1 tsp salt 6 cups flour
Icing Ingredients:
4 cups confectioner sugar
4 tbsp meringue powder
6-8 tbsp warm water
Gel food coloring Instructions:
Preheat your oven to 350 degrees.
Combine your sugar and softened butter in a mixer until completely creamed.
Add your vanilla and eggs, and continue to mix until fluffy.
Add your baking powder and spoon in two cups of flour at a time. Be sure not to over-mix when adding the remaining flour each time.
You should have a firm dough you can split into two equal pieces and roll out on a floured surface.
Roll your piece of dough until it's about 1/4 inch in thickness.
Use your cookie cutter of choice to shape your cookies and place them on a baking sheet with parchment paper.
Bake your cookies for 9-10 minutes, do not allow them to begin browning. Allow them to cool completely before decorating.
While your cookies bake and cool, add your confectioner sugar and meringue powder to a bowl and mix.
Add your water in and mix until smooth. If the icing is too thick, thin by slowly adding more water. If it is too thin, thicken it with some more confectioner sugar. Divide your icing into smaller bowls and add a few drops of gel coloring until you get the desired colors.
Add your colored icings into piping bags or ziplock bags and set aside.
