Secret Veg Tomato Soup If your kiddo is not a fan of eating their veggies, then how about drinking them in a warm soup? This tomato soup sneaks in some veggies and beans packing it with a tasty, nutritious punch! Pro tip: maybe throw in some grilled cheese? Ingredients:
6 medium tomatoes
1 yellow onion
1 red pepper
1 carrot
10oz cherry tomatoes
2 garlic bulbs
15oz canned white kidney beans
2 tbsp olive oil (more for coating)
1 tbsp dried parsley
1 tbsp dried oregano
2 cups vegetable broth
1/2 cup fresh basil
2 tbsp parmesan cheese Instructions:
Preheat your oven to 375 degrees.
Prepare a Dutch oven pot by coating it with some oil and set aside.
Help your kiddo chop the tomatoes and yellow onion in half and place them in the pot.
Roughly chop your carrot and red pepper and place them in the pot along with your cherry tomatoes.
Peel both bulbs of garlic and add the garlic to the pot.
Drain and rinse your beans before adding them to the pot along with your parsley, oregano, and olive oil.
Give your ingredients a mix and a roast in the oven for 45 minutes.
Once your veggies are fork tender, remove them from the oven and add in your broth, basil, and parmesan cheese.
Blend with an immersion blender, or wait for the ingredients to cool slightly before adding them in batches to a blender.
Top with some additional cheese, and enjoy as is or with a yummy grilled cheese!Download Now!
